| Explanation | Ame-ni, tsukuda-ni: Preserved foods made by simmering fish and seaweed in a broth of soy sauce, mirin sweet sake and sugar. Sweet-simmered clams and small fish from Lake Biwa (sweet fish, roach, crucian, corbicula, etc.) are quite popular. Sweet fish are wave-skewered to look as if they were swimming against a current, then grilled with salt to enhance their tempting aroma. |
